The winery owns 90 hectares of noble native varietals located along the Miño River which is a privileged viticultural area in terms of climate and soil. In this area, the grapes reach a perfect balance in sugars and acidity. This subzone within the D.O. Rias Baixas is known as Rosal, where all the best wines of this D.O. come from.

After a careful selection, the grapes are carried in small containers to the winery where they are crushed and gently pressed by pneumatic presses. Slowly the must runs from the presses and ferments slowly in a temperature controlled environment. This first raw must will be the basis of their Albariño La Val and El Rosal Viña Ludy. The marc obtained from the presses is then distilled in their copper stills to produce the two La Val brandies – a white and a herb.
